Fruit salad parfaits with a sweet shortbread cookie crumble – Perfect for breakfast or dessert! Great for leftover fruit salad too!

My husband’s side of the family has a family reunion every year. I think it’s a really great tradition – something that the whole family gathers together for. We might see a few people here and there at birthday parties and such, but it’s so easy to quickly lose touch with the extended family. The family reunion is a great chance for everyone to reconnect.

And I’ll be honest with you, as a busy mom married to a guy who has extremely demanding career, sometimes this reunion sneaks up and I grumble about it a bit (I’m just being real!). It’s a lot of work.

I have to get the kids ready, slathered with sunscreen, extra clothes and diapers packed, snacks packed, etc. I have to put them in the car for an hour or more and keep them entertained. I have to think of a dish to pass that doesn’t need refrigeration or an oven. Naps are skipped, and we’ll probably come home with bug bites.

BUT once we get there, we always have a great time (especially the kids!) enjoying the outdoors, the food, and of course — the company. It’s important for kids to know where they come from and know the strength of their family. If you don’t already host a family reunion, I’d urge you to consider starting this tradition with your family.

Who doesn’t love a good parfait? Layers of flavorful juicy fruit, creamy yogurt and then a great crunchy component. That crunchy component is often granola, but when Walkers Shortbread asked me to team up with them, I immediately started dreaming up this cookie crumble topping for a summertime parfait.

And may I just say – this parfait is great for a potluck! You can easily prep all the components separately and then assemble the parfaits right before serving, using clear plastic punch cups instead of bowls.

You could even have a parfait bar where guests make their own parfait just the way they like it. But if you do that, be prepared to make more cookie crumble because that stuff will go quickly if you let people scoop their own!

Fruit salad parfaits with a sweet shortbread cookie crumble – Perfect for breakfast or dessert! Great for leftover fruit salad too!

Ingredients

Instructions

  • In a food processor, pulse cookies until they are small crumbs. Add 1 tablespoon lemon juice and 1 teaspoon honey and pulse a couple more times until combined. Set aside.

  • In a large bowl, make fruit salad by combining 1 tablespoon lemon juice, 1 tablespoon honey, strawberries, raspberries, blueberries and green grapes.

  • In parfait bowls or cups, layer1/2 cup fruit salad + 1/4 cup vanilla yogurt + 2 tablespoons crumble.Top with additional fruit if desired. Serve immediately!

Notes

  • Feel free to substitute any seasonal fruit! Or use different flavors of yogurt.

Verdict: So good! I may never go back to granola on my parfaits.
Husband’s take: He loves (LOVES) these. The kids do, too – they think they’re getting some over-the-top “special treat,” but in reality, there’s a lot of nutritional benefits to these fun parfaits.
Changes I would make: None are necessary, but I’ll be making these fruit salad parfaits with leftover fruit salad whenever I have it. Pretty much any fruit would taste great in these.
Difficulty: SO easy.
