Like many other Serbian recipes, Proja was a dish for poor people. It was cheap, most of what they need can be found in their homes, and most importantly, it was tasty. The peak of its popularity was in the 1950s after World War 2.
Today’s recipe is a little modernized, but the essence of the original recipe still stands. There are many variations of this dish, depending on what you put in it. The dish is spread all through Balkan countries.
Proja has very few calories and is gluten-free, making it a great substitute for white bread. You can make them as muffins or as bread. There isn’t any way to mess this recipe up.

Ingredients
- 2 pcs Egg
- 5 ml (0.17 floz) Water
- 10 ml (0.34 floz) Oil
- 10 ml (0.34 floz) Milk
- 300 grams (10.58 oz) Corn Flour – Cornflour
- 1 tsp Baking Powder
- 10 ml (0.34 floz) Club Soda – Sparkling Water – Seltzer Water – Fizzy Water – Carbonated Water
- 1 tsp Salt
Instructions
In a bowl mix eggs, oil, water, and milk.
Add cornflour, baking powder, and salt.
Add sparkling water. The mixture should be medium thick
You can add a little bit more flour if you think it’s too watery.
Pour your mixture on a baking sheet or muffin pan.
Preheat the oven on 220°C/428°F and bake them for 20 minutes or until golden brown.
