Sharing All the Healthy Recipes You Need + Healthy January 2020. The new year is almost here, so let’s start it off right with my favorite healthy…ish recipes. I’ve included all of my favorites – everything from breakfast, to lunch, to dinner, to dessert. And each and every one of them is delicious AND healthy…ish. I’m excited to start January off with plenty of color…and deliciousness too. Which of these recipes are your personal favorites?

Today is the very last day of 2019 and I’m feeling all kinds of emotions. I have so much excitement for 2020, but at the same time, I’m sad to be letting go of 2019. This was such a good year and it’s crazy that it’s already over. I’ve said this multiple times this week, but the year really flew by. And the month of December…well I felt like I blinked and it was over in minutes. I’d love a time machine to slow things down! But since I can’t do that, it’s time to look ahead to 2020.

On Thursday we’ll officially kick off our 4th year of Healthy January. But today I’d like to share my favorite healthy (ish) recipes from year’s past in hopes of inspiring you all to embrace color this January (and all year long). The most googled words on New Year’s Day are healthy recipes, diets, and detox. BUT I really don’t believe in any of that. I understand we all want to eat healthier after the holidays, but I still want to enjoy warm and cozy foods. Thankfully this can be done…and I have the recipes to prove it! Yes, some of them have butter, many probably have cheese, but each recipe is filled with wholesome ingredients, plenty of vegetables, whole grains, healthy fats, and lean proteins too. For me, it’s all about balance…everything in moderation.

What does this mean? Well, I do believe in eating unprocessed food, but in addition to bright and colorful fruits and vegetables, there’s also cozy plates of pasta, soups, sheet pan dinners, and yes, even desserts. Healthy…ish is the keyword.

And no boring salads, just really GOOD food.

This month I’ll be sharing plenty of healthy soups, salads, desserts, and easy dinners (one skillet, sheet pan, and instant pot meals are coming!). Before we dive into brand new recipes of 2020, below are some of my favorite healthy dishes from year’s past. My hope is that these recipes will inspire you to actually move forward with your plans for healthy eating in the new year.
